Ingredients
Flour - for this recipe, you will need all-purpose flour. You can use 1 part all-purpose flour and one part whole wheat flour to make your scones a little healthier.

I always use unsalted butter in my recipes, but you can use salted butter if that's all you have but make sure you don't add any more salt to the dough.
Sugar - you can use any type of sugar you have, but I recommend using brown sugar for an extra rich flavor. The molasses gives your cinnamon scones a subtle caramel flavor.
Apple - for this recipe, it is best to use apples that are not too sweet. If you use sweet apples, add a little less sugar to make the scones not too sweet.
Baking powder - baking powder gives you light and fluffy scones. You can substitute the flour and baking powder with self-raising flour.
Milk - I always use whole milk when making scones, but any type or heavy cream will work.

Variations

Berries. Frozen or fresh berries such as blueberries or blackberries also go very well with the autumnal cinnamon flavor. Add the berries at the same time as the wet ingredients to make sure they are well distributed throughout the dough.
Nuts. Finely chopped nuts such as walnuts or hazelnuts also go well with this recipe.

Make sure your butter is cold. This will give your scones an amazing flaky texture.
Don't knead the dough too long. You get dry, tough scones if you work the dough too long.

Ingredients
- 2 ½ cups (350 grams) of flour
- ¼ cup (50 grams) of light brown sugar
- 1 teaspoon baking powder
- 1 stick (110 grams) of butter, small cubes
- ½ cup (125 ml) of whole milk
- 1 teaspoon cinnamon
- 1 apple
- A pinch of salt
Instructions
- Preheat your oven to 400 F (200C).
- Add the flour, baking powder, sugar, salt, and cinnamon to a large bowl and give it a quick whisk.
- With your fingers, rub in the cold butter until it resembles bread crumbs.
- Pour in the milk and quickly knead the dough until everything is combined.
- Transfer the dough onto a baking tray with a piece of parchment paper and shape it into a disk. It should be about 1 ½ inches (3-4 cm) thick.
- Cut the disk into eight wedges and divide them over the tray.
- Give the scones a brush with some milk or egg wash and bake them for about 20 minutes until golden.
- Let the cinnamon scones cool and drizzle over some glaze or serve them with clotted cream and jam.
Notes
Be careful not to twist your cutter while lifting it. This will allow the scones to rise best and make them nice and fluffy.
