The dressing for this salad is made with lemon juice and balsamic vinegar. The fresh sour taste makes the dressing a delicious counterpart to the sweet fruits.
By the way, my honey mustard dressing is also very tasty with this plum salad.
Ingredients
Plums - fresh plums have a fresh sweet flavor that goes perfectly with the lamb's lettuce and spinach.
Don't have plums but would like to make this salad? Then replace them with apricot or peaches.
Lamb's lettuce - lamb's lettuce is one of my favorite types of lettuce. It is not too strong in flavor and goes well with ingredients like melon and mozzarella.
If you also love lamb's lettuce you should definitely give my melon and prosciutto salad a try.
Lemon juice - lemon juice gives a fruity and fresh taste to the dressing. For best results, do use fresh juice and not lemon juice from a bottle.
Balsamic vinegar - balsamic vinegar gives a deep flavor to the dressing and provides some extra color. You could also substitute it with red wine vinegar.

Varieties
This recipe is ideal as a light lunch or side dish, but there are many other variations. Add some grains like lentils or quinoa, for example, to make a whole-meal salad.
Prefer it to be entirely vegan? Replace the honey with maple syrup!
Cheese such as mozzarella, cottage cheese, brie, and feta are also delicious with this salad!

Storage
You can store the salad in the refrigerator for about 4-5 days.
I do recommend that you clean the plums and cucumbers only at the last minute to prevent them from drying out.
The lemon dressing will keep a little longer.
In fact, properly sealed, you can keep it in the refrigerator for 1-2 weeks.
Be sure to shake or stir the dressing before serving to mix all the ingredients.
