Ingredients
Salmon - fresh salmon is best, but you could also use salmon from the freezer. Just make sure the salmon is completely thawed before you start for the best results.
Lemon - since you will also be using the zest of the lemon in this recipe, it is best to use organic lemons.
Thyme - I love the combination of thyme and lemon. Other herbs like dill, oregano, or rosemary also go well with these salmon skewers.
Oil - for the marinade, use an oil that you can heat well, such as sunflower oil. Olive oil is less suitable because it does not withstand heat well.

Instructions
Place the skewers in a shallow dish with water. This will make them less likely to burn when you put the skewers on the grill. Soak them for about 30 minutes.
Pat the salmon dry and cut it into 3-inch cubes. Cut the lemon into thin slices, put the salmon together with the oil, garlic, thyme, salt, and pepper in a bowl, and let the salmon marinate for about an hour.
Remove the salmon from the refrigerator and prick them on the skewers. Prick a slice of lemon on each skewer as well.
