These speculoos truffles are super easy to make with just three ingredients. These no-bake truffles are made with speculaas, cream cheese or mascarpone, and chocolate.

These speculaas truffles are made with speculaas or pepernoten just like my speculaas tiramisu!
I've coated these truffles in dark chocolate, but you can absolutely use milk or white chocolate or a mix.

Ingredients
- Speculaas cookies - use plain without almonds speculaas or speculoos for this speculaas truffle recipe.
- Cream cheese - I prefer to use mascarpone, but any plain cream cheese or Mon chou will work.
- Dark chocolate - use the best quality you can afford to make speculaas truffles. I like to use Callebaut chocolate.

How to make speculaas truffles
- Crumble the speculaas or pepernoten in a food processor or put them in a ziplock bag and press them fine with a rolling pin.
- Add the speculaas crumbs to a bowl and add the mascarpone.
- Mix it well and divide the mixture into approximately16 balls.
- Put the speculaas truffles in the fridge for about 1-2 hours to set.
- Melt ¾ of the chocolate au bain-marie. Make sure that no water gets into the chocolate!
- Remove the chocolate from the heat, add the remaining ¼ of the chocolate to the melted chocolate, and stir well until you have an even mixture.
- Use a fork to dip the speculaas balls in the chocolate and let the excess chocolate drip off the speculaastruffels.
- Place the speculaastruffles on a piece of baking paper and decorate them with speculaaskcrumbs.
Tip: decorate your speculaas truffles with speculaas crumbs or little pieces of candied orange peel.
Variations
- Pepernoten- replace the speculoos with pepernoten for delicious pepernoten truffles.
- Speculoos - you can also use this recipe to make speculoos truffles! (no speculaas and speculoos are not the same)
- Licor 43 - doesn't Licor 43 make everything a little better? Add two tablespoons of Licor 43 to the speculoos mixture.

Equipment
- To make the speculaas crumbles, you need a food processor.

- A pan with a heat-proof bowl to melt the chocolate.

How to store speculaas truffles
Fridge: you can keep the speculaas truffles in the fridge for about a week.
Freezer: in the freezer, they will keep for about three months. Just take them out of the freezer the night before you need them. Make sure they won't stick to each other while you freeze them and store them in a ziplock bag.

- 5 oz dark chocolate

- Mix it well and divide the mixture into approximately16 balls.
- Put the speculaas truffles in the fridge for about 1-2 hours to set.
- Melt 75 grams of the chocolate au bain marie. Make sure that no water gets into the chocolate!
- Remove the chocolate from the heat and add the remaining 25 grams to the melted chocolate and stir well until you have an even mixture.
- Use a fork to dip the speculaas balls in the chocolate and let the excess chocolate drip off the speculaastruffels.
- Place the speculaastruffles on a piece of baking paper and decorate them with speculaaskcrumbs.
