Waldorf salad with chicken is a classic American salad with apple, celery, mayonnaise, lemon and walnuts. I added some chicken to make it perfect for lunch.

The Waldorf salad first appeared in 1896 when the maitre d’hotel of the famous Waldorf-Astoria hotel in New York, Oscar Tschirky, created this salad for a charity ball. It soon became a great success and was featured in Oscar’s cookbook ‘The cook book’.

The first Waldorf salads only contained apples, celery, and mayonnaise but many other ingredients are added today such as grapes or raisins, yogurt, chicken or celeriac. This Waldorf salad with chicken is my take on this classic dish.

Who created the Waldorf salad?

Oscar Tschirky created the Waldorf salad for a charity ball in honor of the St. Mary’s hospital for children in 1896. He was the maître d’hôtel at the Waldorf-Astoria hotel in New York and created many of their signature dishes.

Waldorf salad with chicken is a classic American salad with apple, celery, mayonnaise, lemon and walnuts. I added some chicken to make it perfect for lunch.

Ingredients

  • 170g (about 3/4 cup) chicken, cooked or smoked
  • 50g (a hand full) walnuts, chopped
  • 2 large apples
  • 4 celery sticks
  • 3 tbsp mayonnaise
  • 3 tsp lemon juice

Instructions

  1. Wash and dice the vegetables and dice the chicken.
  2. Peel and dice the apple and add to your vegetables.
  3. Mix everything together and serve with some lettuce.

Notes

Add some grapes to this Waldorf salad for some extra color
