Caramelized onion dip

Caramelized onion dip with yogurt and mascarpone is a creamy dip with mascarpone, Greek yogurt, and caramelized onions. Serve this dip with baguettes or with chips.

Ingredients

  • 250 gram mascarpone
  • 250 ml Greek yogurt
  • ½ teaspoon chives
  • 2 tablespoons butter
  • 3-4 onions
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 tablespoon balsamic vinegar

Instructions

Step 1: caramelize the onions

  • Clean the onions and cut them into half rings.
  • Heat the butter in a thick-bottomed pan and add the onions and salt.
  • Let the onions cook gently over low heat for about an hour.
  • Keep stirring the onions from time to time during the caramelization process to prevent the onions from burning. If it starts to burn you can add a little water.
  • Add the balsamic vinegar and when the onions have a nice, deep brown color they are ready. Let them cool completely before continuing.

Step 2: make the dip

  • Put the cream cheese, Greek yogurt, pepper, chives, and caramelized onions in a mixing bowl and stir well.
  • Season the dip with some salt and pepper if necessary.
  • Put the dip in a nice bowl and serve at room temperature with some chips or French bread.
