Easy egg salad with Greek yoghurt

This easy egg salad with Greek yogurt is super easy and quick to make. All you need for this salad is eggs, Greek yogurt, chives, mustard, paprika, and a little curry powder.

Ingredients

  • 4 eggs
  • 2 tablespoons mayonnaise
  • 2 teaspoons mustard
  • 1 tablespoon chives
  • ½ teaspoon paprika powder
  • ½ teaspoon curry powder
  • Pepper
  • Salt

Instructions

  • Put the eggs in a saucepan with cold water and bring to a boil.
  • Once it boils, turn down the heat and let the eggs simmer gently for 8 minutes. We need hard-boiled eggs for this recipe.
  • Remove the eggs from the hot water and briefly shock them under the cold tap. Peel the eggs and let them cool.
  • Finely chop the chives.
  • Put the eggs in a mixing bowl and mash them with a fork, or cut them into small pieces with a knife.
  • Add the mustard, chives, mayonnaise, paprika, and curry powder, and stir well.
  • Season the egg salad with salt and pepper, and you're done!
