Meringue kisses

Light, melt-in-your-mouth meringue kisses are simple to make and make a perfect hostess gift during the holiday season. These cookies are quick to prepare, and you only need two ingredients to make them!

Ingredients

  • 5 egg whites
  • 1 cup fine sugar
  • a pinch of salt optional

Instructions

  • Preheat your oven to 200 F (90 C) and line your baking tray with parchment paper.
  • Add the egg whites and salt to a large bowl and beat until soft peaks start to form.
  • Gradually add the sugar and continue mixing the egg whites until the foam is stiff and glossy.
  • Transfer the egg whites to a piping bag with your favorite (star) nozzle and pipe your meringue kisses onto the parchment paper.
  • Place the tray in the center of the oven and bake them for about 1 to 1,5 hours or until completely dry.
  • Turn off your oven and let the meringue cool in the closed oven. This can take upto three hours.

Notes

  • Clean your equipment with lemon juice.
  • Never, and I mean never, use cold eggs. Room-temperature eggs make it easier to incorporate as much air as possible.
  • Add your sugar in small steps. Adding one or two tablespoons at a time gives the sugar enough time to dissolve and incorporate it into the egg whites before adding more.
  • Dry your meringue kisses on low heat.
  • Practice your piping skills first with buttercream.
  • Take your time whipping up the egg whites.
