Meringue kisses
Light, melt-in-your-mouth meringue kisses are simple to make and make a perfect hostess gift during the holiday season. These cookies are quick to prepare, and you only need two ingredients to make them!

- 5 egg whites
- 1 cup fine sugar
- a pinch of salt optional
Preheat your oven to 200 F (90 C) and line your baking tray with parchment paper.
Add the egg whites and salt to a large bowl and beat until soft peaks start to form.
Gradually add the sugar and continue mixing the egg whites until the foam is stiff and glossy.
Transfer the egg whites to a piping bag with your favorite (star) nozzle and pipe your meringue kisses onto the parchment paper.
Place the tray in the center of the oven and bake them for about 1 to 1,5 hours or until completely dry.
Turn off your oven and let the meringue cool in the closed oven. This can take upto three hours.
- Clean your equipment with lemon juice.
- Never, and I mean never, use cold eggs. Room-temperature eggs make it easier to incorporate as much air as possible.
- Add your sugar in small steps. Adding one or two tablespoons at a time gives the sugar enough time to dissolve and incorporate it into the egg whites before adding more.
- Dry your meringue kisses on low heat.
- Practice your piping skills first with buttercream.
- Take your time whipping up the egg whites.
