Spinach and arugula salad

This simple spinach and arugula salad with honey mustard dressing Is perfect as a light lunch or a side for your favorite main dishes. Packed with flavor, this salad is definitely one of my family favorites.

Ingredients

For the salad

  • 3 ¼ cups baby spinach
  • 2 cups arugula
  • ½ red onion
  • 1 apple
  • ¼ cup feta cheese
  • 1 handfull walnuts chopped *optional

For the honey mustard dressing

  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • salt and pepper

Instructions

  • Was and dry your spinach and arugula and set them aside.
  • Remove the core and thinly slice the apple and red onion.
  • Divide the spinach, arugula, red onion, and apple slices between the plates and crumble the feta over the salads.
  • Pour the dressing over the salad, and add the walnuts.

Notes

You can make the honey mustard dressing a few days ahead, but I recommend assembling the salad when you're ready to serve to make sure your vegetables are as fresh as possible.
