Variations

I think it is perfect for a BBQ or when people come over for dinner.

You can easily adapt a watermelon salad to taste.

If you don't like feta, you can also replace it with goat cheese or mozzarella. I think the balsamic dressing goes very well with the creamy taste of the soft mozzarella.

Adding some avocado adds some creaminess to the salad, so go ahead and add that if you want to give it something extra.

Try adding some walnuts or pine nuts!

Ingredients

Watermelon - make sure your watermelon is ripe. You can test this by tapping the melon. Is there a hollow sound? Then you know for sure that your melon is ripe and sweet.

Feta cheese- feta is a soft Greek cheese with a slightly sour taste. If you don't like feta, you can replace it with goat cheese or mozzarella. Homemade cottage cheese also works really well!

Balsamic glaze - The dressing for this sweet salad is made with olive oil, balsamic vinegar, and mint. Fresh mint is the tastiest, but dried mint will do as well.

Mint - If you use dried mint, add a teaspoon instead of a tablespoon because dried herbs have a stronger flavor.

Equipment

  • A small bowl to make the balsamic dressing in.
  • A cutting board.
  • A bowl to serve the salad.

Storage

This watermelon feta salad will keep in the refrigerator for about two days.

Ingredients

  • ½ small watermelon
  • ½ English cucumber
  • 2 oz feta cheese

For the dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh mint
  • Salt to taste

Instructions

  • Cut the cucumber and watermelon into cubes and divide them over the plates.
  • Mix the ingredients for the dressing in a bowl and pour it over the watermelon cubes.
  • Crumble the feta and it to the salad.
