- 14 oz pasta
- 1 onion
- 3 cloves garlic
- 1 cup sun-dried tomatoes
- 2 tablespoons olive oil
- 2 packages Boursin fine herbs
- pepper and salt
- 1 tablespoon Italian herbs
- 1 large zucchini
- ½ lb chicken breast
- 6 cups spinach
- 1 stock cube
- 1 ⅓ cup water
Bring a large pan of water to a boil and cook the pasta al dente according to the package directions.
Meanwhile, dice the chicken and zucchini and finely chop the onion and garlic.
Heat the oil in a pan and sauté the onion and garlic until soft and translucent. Add the chicken and fry until almost cooked.
Add the zucchini to the chicken and fry everything for a few more minutes until the chicken and zucchini are cooked.
Add the Italian herbs, water, stock cube, and Boursin to the pan and slowly bring to a boil.
Once the Boursin has melted, add the spinach and simmer gently until the spinach has shrunk.
Spoon the pasta into the sauce and stir well until all the pasta is coated with sauce.
Divide the pasta between plates and sprinkle with some cheese if desired.
