Mediterranean yellow rice

Ingredients

  • 2 cups basmati rice
  • 2 ¼ cup water
  • 2 tablespoons oil
  • 1 large onion
  • 2 cloves garlic
  • ½ teaspoon turmeric
  • ¼ teaspoon paprika
  • ¼ teaspoon cumin
  • ½ teaspoon salt

Instructions

  • Finely chop the onion and garlic.
  • Heat the oil in a large skillet and sauté the onion with the garlic until soft and translucent.
  • Add the turmeric, ground cumin, and paprika and cook for about one minute until fragrant.
  • Add the rice and stir everything together until all the rice is coated with the spices.
  • Pour the water into the rice and bring it to a boil. Once the water is boiling, turn the heat down to low and let the rice cook for about 15-20 minutes. Check after 15 minutes to see if the rice is cooked.
  • Loosen the yellow rice with a fork and serve with kofta and a salad.
