- 2 cups basmati rice
- 2 ¼ cup water
- 2 tablespoons oil
- 1 large onion
- 2 cloves garlic
- ½ teaspoon turmeric
- ¼ teaspoon paprika
- ¼ teaspoon cumin
- ½ teaspoon salt
Finely chop the onion and garlic.
Heat the oil in a large skillet and sauté the onion with the garlic until soft and translucent.
Add the turmeric, ground cumin, and paprika and cook for about one minute until fragrant.
Add the rice and stir everything together until all the rice is coated with the spices.
Pour the water into the rice and bring it to a boil. Once the water is boiling, turn the heat down to low and let the rice cook for about 15-20 minutes. Check after 15 minutes to see if the rice is cooked.
Loosen the yellow rice with a fork and serve with kofta and a salad.
