This summer salad with plums and lamb's lettuce is quick to prepare and ideal for lunch. Finish the salad with a simple dressing of lemon juice and honey.

Ingredients

  • 3 plums
  • 6 ¼ cup spinach
  • 3 cups arugula
  • ½ english cucumber

For the dressing

  • 3 tablespoons olive oil
  • 1 ½ tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Instructions

  • Put the dressing ingredients in a bowl and stir well.
  • Cut the plum and cucumber into pieces.
  • Divide the spinach, corn salad, cucumber, and prune pieces among the plates.
  • Pour over some dressing and serve immediately.
