- 6 ¼ cup spinach
- 3 cups arugula
- ½ english cucumber
For the dressing
- 3 tablespoons olive oil
- 1 ½ tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
Put the dressing ingredients in a bowl and stir well.
Cut the plum and cucumber into pieces.
Divide the spinach, corn salad, cucumber, and prune pieces among the plates.
