Spaghetti sauce with chicken

There is nothing better than a homemade spaghetti sauce. This healthy sauce is packed with vegetables and super easy to make. The mild flavor of the zucchini and the chicken makes it perfect for children.

Ingredients

  • 1 lbs chicken breast diced
  • 2 bell peppers diced
  • 1 zucchini diced
  • 1 onion finely chopped
  • 3 cloves garlic finely chopped
  • 1 tablespoon olive oil
  • 2 teaspoon thyme
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon sugar *OPTIONAL
  • 1 can 16 oz diced tomatoes
  • 5 oz tomato puree
  • ½ cup water

Instructions

  • Heat the oil in a large heavy-bottomed pan and add the onions.
  • Cook the onions for a few minutes until they soften. Add the garlic and cook them for another 1-2 minutes.
  • Add the chicken and cook them on medium heat until they are almost done.
  • Add the bell pepper and zucchini and cook for another few minutes until the. vegetables begin to soften
  • Pour in the diced tomatoes, tomato puree, water, thyme, pepper, salt, and sugar. Let the sauce simmer for about 20 minutes until the sauce has the right thickness.

Notes

Try making this sauce with other vegetables like carrot, celery, or broccoli!
