Speculaas truffles
These speculoos truffles are super easy to make with just three ingredients. These no-bake truffles are made with speculaas, cream cheese or mascarpone, and chocolate.

- ½ lb speculaas cookies
- ⅓ cup cream cheese
- 4 oz dark chocolate
Crumble the speculaas or pepernoten in a food processor or put them in a ziplock bag and press them fine with a rolling pin.
Add the speculaas crumbs to a bowl and add the mascarpone.
Mix it well and divide the mixture into approximately 16 balls.
Put the speculaas truffles in the fridge for about 1-2 hours to set.
Melt 75 grams of the chocolate au bain marie. Make sure that no water gets into the chocolate!
Remove the chocolate from the heat. Add the remaining 25 grams to the melted chocolate, and stir well until you have an even mixture.
Use a fork to dip the speculaas balls in the chocolate and let the excess chocolate drip off the speculaas truffles.
Place the speculaas truffles on a piece of baking paper and decorate them with speculaas crumbs.
