Speculaas truffles

These speculoos truffles are super easy to make with just three ingredients. These no-bake truffles are made with speculaas, cream cheese or mascarpone, and chocolate.

Ingredients

  • ½ lb speculaas cookies
  • cup cream cheese
  • 4 oz dark chocolate

Instructions

  • Crumble the speculaas or pepernoten in a food processor or put them in a ziplock bag and press them fine with a rolling pin.
  • Add the speculaas crumbs to a bowl and add the mascarpone.
  • Mix it well and divide the mixture into approximately 16 balls.
  • Put the speculaas truffles in the fridge for about 1-2 hours to set.
  • Melt 75 grams of the chocolate au bain marie. Make sure that no water gets into the chocolate!
  • Remove the chocolate from the heat. Add the remaining 25 grams to the melted chocolate, and stir well until you have an even mixture.
  • Use a fork to dip the speculaas balls in the chocolate and let the excess chocolate drip off the speculaas truffles.
  • Place the speculaas truffles on a piece of baking paper and decorate them with speculaas crumbs.
