Tzatziki

Making your own tzatziki sauce is super easy and quick to prepare. This fresh, creamy sauce is made with cucumber and Greek yogurt.

Tzatziki sauce is a traditional Greek dish often served with souvlaki and Greek salads such as horiatiki. Of course, homemade pita bread should not be missing from this meal.

Because you can also make this sauce in advance and because of its neutral taste, this recipe also does well during BBQs in the summer.

Ingredients

Cucumber - the cucumber adds a wonderful fresh flavor to the sauce.

Dill - dill is used in most recipes, but you could also replace it with mint, parsley, or chives.

Greek yogurt - preferably use Greek yogurt with 10% fat.

Olive oil - use good quality olive oil for making this sauce.

How to make tzatziki:

Step 1:
Wash the cucumber and cut it in half lengthwise and remove the seeds.

Step 2:
Grate the cucumber, put it into a sieve or a cloth, and drain it until most of the moisture is gone.

Step 3:
Add the grated cucumber and the rest of the ingredients to a bowl and mix them well.

Step 4:
Season the tzatziki with salt and pepper and set it aside in the fridge.

Equipment

  • Cheesecloth or a large strainer.
  • Two bowls.
  • Nice bowls to serve the tzatziki in.

Storage

Refrigerator: you can keep this sauce covered in the refrigerator for about 2-3 days.

I don't recommend freezing this sauce because this will change the structure of the sauce.

  • ½ cucumber
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon dill
  • 1 cup vegan yogurt
  • 1 clove garlic pressed
  • ¼ teaspoon Salt
  • teaspoon Pepper

Instructions

  • Wash the cucumber and cut it in half lengthwise.
  • Remove the seeds with a spoon, grate the cucumber, and add salt to help drain the moisture.
  • Place the cucumber in a sieve or a tea towel and let it drain until most of the moisture is gone. This can take a few hours so I reccomend placing the grated cucumber in the fridge.
  • Add the drained cucumber to a bowl and mix the rest of the ingredients.
  • Season with salt and pepper and serve with your favorite Greek dishes or as a dip for vegetables.

Notes

  • To make dairy-free tzatziki it is important to use a thick, Greek style vegan yogurt. If your yogurt is too thin you can drain it overnight in a piece of cheesecloth or a clean kitchen towel.
  • This is also why it is so important to drain the moisture out of th egrated cucumber. You don't want a runny tzatziki sauce.
  • You can store dairy-free tzatziki in the fridge for upto four days.
