Broccoli and bacon quiche
Ingredients
For the quiche crust
- 2 cups flour
- ½ cup cold butter
- 4-5 tablespoons cold water
- A pinch of salt
For the quiche filling
- 2 ½ cup broccoli
- 12 slices bacon
- 1 large onion
- 2 cloves garlic
- 4 eggs
- ⅔ cup milk
- 1 cup grated cheese
- ½ teaspoon salt
- 1 teaspoon rosemary
Instructions
The quiche crust
- Put the flour and salt in a mixing bowl and stir briefly.
- Cut the cold butter into small cubes, and with cold hands, rub the butter through the flour until it looks like bread crumbs.
- Add cold water little by little until you can knead a smooth dough. Be careful not to knead the dough too long!
- Wrap the dough in cling film and leave it in the refrigerator for half an hour.
The broccoli and bacon filling
- Preheat the oven to 200 degrees.
- Bring water to a boil and blanch the broccoli in it. This will take about 4-5 minutes.
- Meanwhile, in a dry frying pan, fry the bacon and remove it from the pan.
- Chop the onion and garlic and sauté in the remaining fat until translucent.In a mixing bowl, mix together the eggs, milk, rosemary, salt, pepper and grated cheese.
- Remove the dough from the refrigerator and roll it into a thin round piece about 5 mm thick.
- Place the dough in the quiche pan,
- Poke holes in the crust, and pre-bake for 5 minutes.
- Remove the quiche bottom from the oven and divide the bacon, broccoli, and onions on top
- Pour the egg mixture over the vegetables and carefully place the quiche in the center of the oven.
- Bake the quiche for 20 minutes or until the top is a nice golden brown color.
