Rosemary: You can't make herbes de Provence without rosemary, but be careful because it can be overpowering.

Herbes de Provence with lavender: Store-bought herbs de Provence often contain lavender, especially in the USA. Add half a tablespoon of lavender to give your seasoning a double floral flavor.
Adding salt: I always make my seasonings without salt, but if you want to, you can add one teaspoon of salt to the mix.
How to make herbes de Provence
To make herbes de Provence, you need to add all the herbs to a small bowl. You don't want to mix them in your container because there isn't much space, and the herbs won't distribute evenly.
Stir the herbs until everything is completely combined and transfer them to your spice jar. I like to make a small funnel out of parchment paper for this job, but you could also use a spoon or a piece of paper.
Herbes de Provence uses
Now that you've made your seasoning, you need to know how to use it. I love to make herbed de Provence chicken with roasted vegetables. It instantly transports me to France!
To make roasted vegetables or potatoes, you spread your veggies in an even layer on a baking sheet, drizzle oil, salt, and every de Provence over them, and mix until all the pieces are coated before roasting them in the oven.
You can also use it as a marinade. Add one tablespoon to ¼ cup of vegetable oil to marinade chicken, fish, or meat.
My tips for making your own seasonings
- Use fresh dried herbs. The fresher your herbs are, the better the flavor of your seasoning will be. It might be tempting to use old herbs that have been hanging around in your pantry for ages, but trust me when I say, go get new herbs for this recipe.
